Description

The Culinary Worker IV oversees and directs the food service operations within a complex institution, ensuring efficient and effective delivery of culinary services. This position involves strategic planning, procurement, inventory management, menu preparation, record keeping, and supervision of kitchen staff. Culinary Worker IV is responsible for maintaining high standards of food quality, safety, and sanitation while managing a team to deliver exceptional dining experiences.

Key Responsibilities:

Operations Management:

Plan, organize, and oversee daily food service operations.

Procure food items, cleaning supplies, and equipment as necessary.

Monitor inventory levels and ensure proper stock rotation and storage.

Prepare menus, taking into account nutritional requirements and customer preferences.

Maintain records and prepare reports on food usage, costs, and other operational metrics.

Cooking and Food Preparation:

Prepare and supervise complex quantity cooking and baking.

Ensure adherence to standardized recipes and portion sizes.

Prepare a variety of desserts including cakes, cookies, pies, and puddings.

Supervise food preparation, service, sanitation, and safety procedures.

Staff Supervision and Training:

Train and supervise kitchen staff in food preparation techniques and safety standards.

Evaluate performance and provide feedback to staff members.

Enforce disciplinary procedures as needed, including completing write-ups.

Sanitation and Safety:

Maintain sanitary conditions in kitchen and dining areas, ensuring compliance with health and safety regulations.

Supervise cleaning activities and oversee proper disposal of leftover food.

Menu Planning and Special Diets:

Collaborate with dietitians and other staff to plan menus and accommodate special dietary needs.

Estimate food quantities required for various meal services.

Administrative Duties:

Assist in the purchase and requisition of supplies and equipment.

Monitor food production schedules and ensure timely delivery of meals.

Participate in planning sessions and contribute to operational improvements.

Typical Qualifications

Minimum Qualifications:

High school diploma or equivalent.

Two (2) years (24 months) of general work experience in quantity cooking in a commercial setting.

One (1) year (12 months) of experience comparable to that described in the lower level of this series.

As required by the position to be filled, possession of the Illinois Department of Public Health, Food Handler Training Certification (from an American National Standards Institute (ANSI) accredited trainer).

Knowledge, Skills, and Abilities:

Knowledge of materials and methods used to prepare food on a large scale, use and care of relevant utensils and equipment, and food values and nutrition.

Knowledge of current principles and practices of large-scale kitchen management, sanitary procedures and directives.

Ability to plan menus.

Ability to supervise and instruct subordinates.

Ability to pass food handler's examination.

Actively look for ways to help people.

Understand written sentences and paragraphs in work related documents.

Conduct tests and inspections of products, services, or processes to evaluate quality or performance.

Use relevant information and individual judgment to determine whether events or processes comply with laws, regulations, or standards.

Develop specific goals and plans to prioritize, organize, and accomplish your work.

Job requires being careful about detail and thorough in completing work tasks.
